Ingredients

4 ripe peaches, halved and pitted

1 tablespoon olive oil

6 cups arugula

1 cup crumbled feta cheese

1/4 cup toasted walnuts, roughly chopped

1/4 cup balsamic glaze

Salt and pepper to taste

Instructions

Preheat your grill to medium-high heat.

Brush the cut sides of the peach halves with olive oil to prevent sticking.

Place the peaches cut-side down on the grill. Grill for about 4-5 minutes, or until you see nice grill marks and the peaches are tender. Remove from the grill and let them cool slightly before slicing.

In a large bowl, combine the arugula, crumbled feta, and toasted walnuts.

Slice the grilled peaches and add them to the salad mixture.

Drizzle the balsamic glaze over the salad and gently toss to combine. Season with salt and pepper to taste.

Serve immediately, garnishing with extra walnuts and feta if desired.
