Grilled Pineapple and Chicken Teriyaki Skewers

Ingredients
  

1 pound boneless, skinless chicken thighs (cut into 1-inch cubes)

2 cups fresh pineapple, cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1/4 cup soy sauce

1/4 cup teriyaki sauce

2 tablespoons honey

1 tablespoon sesame oil

2 cloves garlic, minced

Fresh ginger, grated (1 teaspoon)

Salt and pepper, to taste

Skewers (bamboo or metal)

Instructions
 

Marinate Chicken: In a large bowl, combine the soy sauce, teriyaki sauce, honey, sesame oil, garlic, and grated ginger. Add the cubed chicken thighs to the marinade, making sure they're evenly coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for maximum flavor.

    Prepare Skewers: If using bamboo skewers, soak them in water for about 30 minutes to prevent burning on the grill. If using metal skewers, skip this step.

      Assemble Skewers: Thread the marinated chicken, pineapple, and bell pepper pieces onto the skewers, alternating between each item to create a colorful pattern. Leave a little space between each piece for even cooking.

        Preheat Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

          Grill Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and has nice grill marks. The pineapple and peppers should also be slightly caramelized and tender.

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Drizzle with additional teriyaki sauce if desired and sprinkle with sesame seeds or chopped green onions for garnish.
