4 large portobello mushrooms, stems removed

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon thyme leaves (fresh or dried)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crumbled feta cheese (optional, for topping)

Instructions
 

Marinate the Mushrooms: In a bowl, whisk together the balsamic vinegar, olive oil, minced garlic, oregano, thyme, salt, and pepper. Place the portobello mushrooms in a shallow dish and pour the marinade over them, ensuring they are fully coated. Allow them to marinate for at least 30 minutes, turning occasionally.

    Preheat the Grill: Preheat your grill to medium-high heat (about 375-400°F / 190-200°C).

      Grill the Mushrooms: Once the grill is hot, place the marinated portobello mushrooms gill side down on the grill. Cook for about 5-7 minutes, then flip them over and grill for another 5-7 minutes, or until they are tender and have nice grill marks.

        Prepare the Balsamic Glaze: While the mushrooms are grilling, pour the remaining marinade into a small saucepan and bring it to a boil over medium heat. Reduce the heat and let it simmer for about 5 minutes, or until it thickens slightly into a glaze.

          Serve: Remove the grilled mushrooms from the grill and place them on a serving platter. Drizzle the balsamic glaze over the top. If desired, sprinkle with crumbled feta cheese and garnish with fresh parsley.
