Ingredients

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup ranch dressing

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon black pepper

1/2 teaspoon salt

Fresh parsley, chopped (for garnish)

Skewers (soaked in water if using wooden skewers)

Instructions

Marinate the Chicken: In a large mixing bowl, combine ranch dressing, minced garlic, grated Parmesan cheese, olive oil, lemon juice, onion powder, paprika, black pepper, and salt. Stir until well mixed.

Add Chicken: Add the chicken cubes to the marinade, making sure they are well coated. Cover the bowl and refrigerate for at least 30 minutes (for best results, marinate for 2 hours).

Prepare the Grill: Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked in water for 30 minutes to prevent burning.

Skewer the Chicken: Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

Grill the Skewers: Place the skewers on the grill and cook for 7-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

Garnish and Serve: Remove chicken skewers from the grill and let them rest for a few minutes. Garnish with freshly chopped parsley before serving.

Enjoy: Serve your grilled ranch garlic Parmesan chicken skewers with dipping sauce or alongside a fresh salad.
