1 pound boneless skinless chicken breasts, cut into 1-inch cubes

1/2 cup ranch dressing

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried parsley

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil

1 red bell pepper, cut into chunks

1 zucchini, sliced into thick rounds

Wooden skewers (soaked in water for 30 minutes before use)

Instructions
 

Marinate the Chicken: In a large bowl, combine the ranch dressing, Parmesan cheese, minced garlic, onion powder, dried parsley, black pepper, and salt. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 1 hour (or up to overnight) to allow the flavors to meld.

    Preheat the Grill: Heat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat on the stovetop over medium-high heat.

      Prepare the Skewers: Thread the marinated chicken onto the soaked wooden skewers, alternating with chunks of red bell pepper and slices of zucchini. Leave a little space between each piece for even cooking.

        Brush with Olive Oil: Lightly brush the skewers with olive oil to prevent sticking and to add flavor.

          Grill the Skewers: Place the skewers on the hot grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F/74°C) and has grill marks.

            Serve: Carefully remove the skewers from the grill and let them rest for a few minutes. Serve hot, garnished with additional Parmesan cheese and fresh parsley if desired.
