1 medium zucchini, sliced into thick rounds

1 red bell pepper, cut into large strips

1 yellow bell pepper, cut into large strips

1 medium eggplant, cut into thick slices

1 cup cherry tomatoes

1 red onion, cut into wedges

3 tablespoons olive oil

Salt and black pepper, to taste

Fresh herbs (like thyme or rosemary) for garnish

For the Lemon Dressing:

3 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

1 teaspoon honey or maple syrup

4 tablespoons olive oil

Salt and pepper to taste

Prepare the Vegetables: Preheat your grill to medium-high heat. In a large bowl, combine zucchini, bell peppers, eggplant, cherry tomatoes, and red onion. Drizzle with olive oil and season with salt and black pepper. Toss until all vegetables are evenly coated.

    Grill the Vegetables: Place the vegetables on the grill and cook for about 4-5 minutes per side, or until tender and grill marks appear. Remove from the grill and let cool slightly.

      Make the Lemon Dressing: In a small bowl, whisk together lemon juice, Dijon mustard, honey (or maple syrup), olive oil, salt, and pepper until well combined.

        Assemble the Platter: Arrange the grilled vegetables on a large serving platter. Drizzle the lemon dressing over the top.

          Garnish: Sprinkle fresh herbs on top for extra flavor and presentation.
