Ingredients

1 lb ground beef (80/20 blend)

2 medium potatoes, peeled and diced

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 bell pepper, diced (any color)

1 small onion, finely chopped

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup sour cream

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions

Cook the Potatoes: In a medium saucepan, bring water to a boil. Add the diced potatoes and cook for 10-12 minutes, or until tender. Drain and set aside.

Sauté Veggies: In a large skillet over medium heat, add a drizzle of oil and heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes until softened. Stir in the garlic and cook for an additional minute.

Brown the Beef: Push the veggies to one side of the skillet. Add the ground beef to the skillet and break it apart with a spatula. Cook until browned, approximately 7-8 minutes. Season with salt, pepper, chili powder, cumin, and smoked paprika.

Combine Ingredients: Once the beef is browned, stir in the black beans and corn. Add the cooked potatoes, mixing everything together well. Let it cook for 2-3 more minutes to allow the flavors to meld.

Assemble the Taco Bowl: In a large bowl, layer the beef and potato mixture at the bottom. Top with shredded cheddar cheese, diced avocado, and a drizzle of sour cream.

Garnish and Serve: Finish with a sprinkle of fresh cilantro and serve with a side of crunchy tortilla chips for an extra bite. Enjoy your Beefy Potato Fiesta Taco Bowl!
