1 lb ground beef

1 cup long-grain white rice

1 can (14.5 oz) diced tomatoes (with juice)

1 cup beef broth

1 medium onion, chopped

1 bell pepper, chopped (any color)

2 cloves garlic, minced

1 cup frozen mixed vegetables (carrots, peas, corn)

1 cup shredded cheddar cheese

1 tsp Italian seasoning

1 tsp paprika

Salt and pepper to taste

Olive oil for sautéing

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, approximately 6-8 minutes. Drain excess fat if necessary.

        Season and Combine: Stir in the diced tomatoes (with juice), beef broth, long-grain rice, Italian seasoning, paprika, salt, and pepper. Mix in the frozen mixed vegetables until evenly distributed.

          Transfer to Casserole Dish: Pour the beef and rice mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil, sprinkle the shredded cheddar cheese on top, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Once done, remove the casserole from the oven, let it sit for 5 minutes. Garnish with fresh parsley if desired and serve hot.
