Ingredients

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) baked beans (preferably with brown sugar or maple flavor)

1 can (14.5 oz) diced tomatoes, drained

1 cup corn kernels (fresh or frozen)

1 tablespoon Worcestershire sauce

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

2 cups tortilla chips, slightly crushed

Fresh cilantro or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Sauté Aromatics: Add the chopped onion and garlic to the skillet with the beef. Cook for an additional 3-4 minutes, or until the onion is translucent.

Mix Ingredients: In a large mixing bowl, combine the cooked beef mixture with the baked beans, diced tomatoes, corn, Worcestershire sauce, chili powder, cumin, and season with salt and pepper. Stir well until all ingredients are evenly mixed.

Layer the Casserole: In a 9x13-inch baking dish, spread half of the crushed tortilla chips at the bottom. Pour the beef and bean mixture over the chips, spreading it out evenly. Top with the remaining tortilla chips and sprinkle the shredded cheddar cheese on top.

Bake: Cover the dish loosely with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.

Garnish & Serve: Once out of the oven, let the casserole cool for a few minutes. Garnish with chopped cilantro or parsley if desired. Serve warm and enjoy!
