  • 1 pound ground beef preferably 80/20 for flavor
  • 1 can red enchilada sauce 10 oz
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup shredded cheddar cheese for topping
  • 1 cup cooked rice white or brown
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons olive oil for cooking
  • 1 cup sour cream for serving
  • 1 cup diced tomatoes fresh or canned
  • salt and pepper to taste

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes.
  • Stir in minced garlic, ground cumin, and chili powder, cooking for an additional 1-2 minutes until fragrant.
  • Add the red enchilada sauce, black beans, corn, and diced tomatoes to the skillet, stirring to combine. Bring the mixture to a simmer.
  • Fold in the cooked rice and half of the shredded cheddar cheese, stirring until everything is well mixed and heated through, about 3-5 minutes.
  • Remove from heat and sprinkle the remaining cheddar cheese on top. Cover the skillet with a lid to melt the cheese, approximately 2-3 minutes.
  • Serve hot, topped with a dollop of sour cream and additional toppings like cilantro or sliced jalapeños if desired.
