1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 bell pepper (any color), chopped

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

Fresh spinach or kale (a handful, optional for added greens)

Chopped fresh cilantro or parsley for garnish

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with a pinch of salt. Sauté for about 10-12 minutes, stirring occasionally, until they are tender and starting to brown. If they start to stick, you can add a splash of water or broth.

    Cook the Turkey: Push the sweet potatoes to one side of the skillet, then add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper to the skillet. Sauté for 3-4 minutes until they’re softened. Then, add the minced garlic and cook for an additional minute.

      Add the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Use a spatula to break it apart and stir everything together. Cook until the turkey is browned and cooked through, about 5-7 minutes.

        Season: Sprinkle in the smoked paprika, cumin, chili powder, salt, and pepper, stirring well to combine. If you’re using spinach or kale, add it at this point and allow it to wilt.

          Finishing Touches: Taste and adjust the seasonings if needed. Allow the mixture to cook together for another 2-3 minutes.

            Serve: Remove from heat, sprinkle with chopped cilantro or parsley for garnish, and serve hot.
