Ingredients
  

1 cup (240 ml) Guinness stout beer

1 cup (230 g) unsalted butter, cubed

1 ¾ cups (220 g) all-purpose flour

2 cups (400 g) granulated sugar

¾ cup (65 g) unsweetened cocoa powder

2 teaspoons baking soda

½ teaspoon salt

2 large eggs

½ cup (120 ml) sour cream

1 tablespoon vanilla extract

1 ½ cups (360 ml) heavy cream (for frosting)

8 oz (225 g) cream cheese, softened

2 cups (240 g) powdered sugar

1 tablespoon cocoa powder (for frosting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Prepare the Guinness Mixture: In a medium saucepan, heat the Guinness stout and butter over medium heat until the butter is melted and the mixture is just beginning to boil. Remove from heat and let cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking soda, and salt.

        Combine Wet Ingredients: Whisk together the eggs, sour cream, and vanilla extract in a separate bowl. Gradually add the slightly cooled Guinness mixture, whisking until combined.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

            Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

              Prepare the Frosting: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the heavy cream while continuing to beat. Add in the powdered sugar and cocoa powder, mixing until smooth and creamy.

                Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of frosting on top. Place the second cake layer on top and frost the top and sides of the cake.

                  Chill and Serve: For the best flavor, let the cake chill in the refrigerator for at least 1 hour before serving. Slice and enjoy!
