4 cups elbow macaroni

1 cup mayonnaise

1 cup Greek yogurt

1 teaspoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1 cup celery, finely chopped

1 cup red bell pepper, finely diced

1 cup green onions, sliced

1/2 cup sweet pickle relish

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the elbow macaroni according to package directions in a large pot of salted boiling water. Drain and rinse under cold water to cool. Set aside.

    In a large mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, onion powder, and smoked paprika. Whisk until smooth and creamy.

      Add the cooked macaroni to the bowl with the dressing mixture and mix well to coat.

        Fold in the chopped celery, red bell pepper, green onions, and sweet pickle relish. Stir until evenly distributed.

          Season with salt and pepper to taste, adjusting as necessary.

            Cover the salad and refrigerate for at least 1-2 hours before serving, allowing the flavors to meld together.
