1 lb boneless chicken thighs

2 tbsp harissa paste

3 tbsp honey

2 tbsp olive oil

1 cup jasmine rice

1 3/4 cups chicken broth

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Lemon wedges for serving

Marinate the Chicken: In a mixing bowl, combine the harissa paste, honey, olive oil, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Allow marinating for at least 30 minutes (or up to overnight in the fridge for deeper flavor).

    Cook the Rice: Rinse the jasmine rice under cold water. In a medium saucepan, bring the chicken broth to a boil. Add the rinsed rice, reduce the heat to low, cover, and let it simmer for about 15 minutes. Once done, fluff with a fork and set aside.

      Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 5-7 minutes per side or until the internal temperature reaches 165°F (74°C). Remove from heat and let it rest for 5 minutes before slicing.
