1 (30 oz) package frozen hash browns, thawed

1 cup cooked breakfast sausage, crumbled (or bacon, if you prefer)

1 cup shredded cheddar cheese

1 cup chopped bell peppers (red and green)

1/2 cup finely chopped onion

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil (for greasing the pan)

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the baking dish: Grease a 9x13-inch baking dish with olive oil to prevent sticking.

      Mix the base: In a large bowl, combine the thawed hash browns, cooked sausage (or bacon), bell peppers, onion, and half of the shredded cheddar cheese. Mix well until evenly combined.

        Prepare the egg mixture: In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, and a pinch of salt and pepper until well blended.

          Combine: Pour the egg mixture over the hash brown mixture in the large bowl. Stir gently until everything is coated in the egg mixture.

            Layer in the dish: Pour the combined mixture into the prepared baking dish, spreading it evenly. Top with the remaining cheddar cheese.

              Bake: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the eggs are set and the top is golden brown.

                Cool and serve: Remove the casserole from the oven and let it cool for about 5-10 minutes. Garnish with chopped chives or parsley if desired before slicing and serving.
