Ingredients

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup vegetable oil

4 large eggs

3 cups grated carrots (about 6 medium carrots)

1 cup crushed pineapple, drained

1 cup crushed walnuts (or pecans)

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1/4 cup crushed pineapple, drained

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set aside.

Prepare the Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well to combine.

Mix the Wet Ingredients: In a separate bowl, whisk together the vegetable oil and eggs until well blended. Stir in the grated carrots, crushed pineapple, crushed walnuts, and vanilla extract.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Avoid over-mixing, as this can make the cake dense.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, carefully remove them from the pans and transfer to wire racks to cool completely.

Prepare the Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese and butter together until creamy and smooth. Gradually add the powdered sugar and continue to mix until well combined. Stir in the vanilla extract and crushed pineapple until fully incorporated.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top, and frost the top and sides of the cake with the remaining frosting.

Garnish (Optional): For an extra touch, you can sprinkle additional crushed walnuts on top of the frosting or add decorative pineapples and carrots for visual appeal.

Serve and Enjoy: Slice your Hawaiian Carrot Pineapple Cake and serve it to your guests, or enjoy it as a delightful treat any time of the day!
