4 chicken thighs (bone-in, skin-on)

½ cup soy sauce

⅓ cup brown sugar

¼ cup ketchup

¼ cup pineapple juice (fresh or canned)

2 tablespoons rice vinegar

1 tablespoon freshly grated ginger

2 cloves garlic (minced)

1 teaspoon sesame oil

1 teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

2 green onions (sliced, for garnish)

Fresh pineapple slices (for grilling, optional)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, grated ginger, minced garlic, sesame oil, black pepper, and red pepper flakes (if using). Whisk until the sugar dissolves.

    Add the Chicken: Place the chicken thighs in the marinade, ensuring they're well-coated. Cover the bowl with plastic wrap or transfer everything to a resealable plastic bag. Let it marinate in the refrigerator for at least 2 hours, or overnight for more intense flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F/190°C). If using charcoal, wait until the coals are covered in white ash.

        Prepare for Grilling: Remove the chicken from the marinade, letting excess drip off. You can reserve the marinade for basting if you boil it for 5 minutes first to kill any bacteria.

          Grill the Chicken: Place the marinated chicken thighs skin-side down on the grill. Grill for about 6-8 minutes until nicely charred. Flip and grill for another 6-8 minutes or until the internal temperature reaches 165°F (75°C).

            Add Pineapple (Optional): If using fresh pineapple slices, place them on the grill during the last few minutes of cooking to achieve nice char marks.

              Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.

                Serve: Garnish with sliced green onions and serve with grilled pineapple slices, sticky rice, or a fresh salad for a complete Hawaiian meal.
