Ingredients

3 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 1/2 cups whole wheat flour

1/2 cup chopped walnuts (optional)

1/2 cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir in the honey (or maple syrup), eggs, and vanilla extract until well blended.

Add Dry Ingredients: Sprinkle the baking soda, salt, and cinnamon over the wet mixture. Stir to combine. Gradually fold in the whole wheat flour until just incorporated - be careful not to overmix!

Optional Add-ins: If using, gently fold in the chopped walnuts and dark chocolate chips until evenly distributed throughout the batter.

Transfer to Pan: Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.

Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Slice and Serve: Once cooled, slice the bread and enjoy! It can be stored in an airtight container for up to a week.
