1 cup almond flour

2 tablespoons coconut oil, melted

2 tablespoons maple syrup or honey

Pinch of salt

For the cheesecake filling:

2 ripe bananas, mashed

16 oz (450g) low-fat cream cheese, softened

1 cup Greek yogurt (plain, non-fat)

1/2 cup protein powder (vanilla or unflavored)

1/4 cup honey or agave syrup (adjust sweetness to taste)

2 teaspoons vanilla extract

1 tablespoon lemon juice

1 teaspoon cinnamon

For topping (optional):

Sliced bananas

Crushed nuts (almonds or walnuts)

A drizzle of honey

Instructions
 

Prepare the crust:

    - Preheat the oven to 350°F (175°C).

      - In a mixing bowl, combine almond flour, melted coconut oil, maple syrup (or honey), and a pinch of salt.

        - Mix until the ingredients form a dough.

          - Press the dough evenly into the bottom of a 9-inch springform pan.

            - Bake for 10 minutes until lightly golden. Remove and let cool.

              Make the cheesecake filling:

                - In a large bowl, combine the mashed bananas, softened cream cheese, Greek yogurt, protein powder, honey, vanilla extract, lemon juice, and cinnamon.

                  - Using an electric mixer on medium speed, beat the mixture until smooth and well combined. Ensure there are no lumps.

                    Combine and bake:

                      - Pour the cheesecake filling over the cooled crust, spreading it evenly.

                        - Bake in the preheated oven for 25-30 minutes, or until the edges are set but the center still has a slight jiggle.

                          Cool and chill:

                            - Remove the cheesecake from the oven and let it cool at room temperature for 1 hour.

                              - Once cooled, refrigerate for at least 3 hours (or overnight) to set completely.

                                Serve:

                                  - Carefully release the cheesecake from the springform pan.

                                    - Top with sliced bananas, crushed nuts, and a drizzle of honey if desired.
