2 ripe bananas, mashed

1 ½ cups rolled oats

½ cup whole wheat flour

¼ cup almond butter (or any nut butter of choice)

¼ cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

½ cup dark chocolate chips (or dairy-free chips)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and creamy.

      Combine Dry Ingredients: In another bowl, whisk together the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.

        Incorporate Dry into Wet: Gradually add the dry mixture into the wet ingredients, stirring until just combined.

          Add Chocolate Chips: Fold in the dark chocolate chips until evenly distributed.

            Scoop Cookies: Using a tablespoon or cookie scoop, drop rounded tablespoons of the cookie dough onto the prepared baking sheet, leaving a little space between each cookie.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the center is set.

                Cool: Once done, remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
