1 lb lean ground turkey or beef

1 medium onion, chopped

2 cloves garlic, minced

3 cups low-sodium beef or vegetable broth

2 medium carrots, diced

2 ribs celery, diced

2 medium potatoes, diced (or 1 head of cauliflower for a lower-carb option)

1 ½ cups chopped kale or spinach

2 cups shredded cheddar cheese (lightly packed)

1 tsp paprika

1 tsp dried thyme

Salt and pepper to taste

1 tablespoon olive oil

½ cup Greek yogurt (for creaminess)

Fresh parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and ground turkey or beef, cooking until browned and cooked through, breaking it up with a spoon as it cooks.

      Add the diced carrots, celery, and potatoes (or cauliflower) to the pot. Stir to combine.

        Pour in the broth and bring the mixture to a boil. Reduce heat, cover, and simmer for about 15 minutes, until the vegetables are tender.

          Stir in the chopped kale or spinach, paprika, thyme, salt, and pepper. Continue to cook for an additional 5 minutes until the greens are wilted.

            Lower the heat, then gradually stir in the shredded cheddar cheese and Greek yogurt until melted and creamy.

              Adjust seasoning as needed with more salt and pepper. If you prefer a thicker soup, let it simmer uncovered for a few more minutes.
