Ingredients
  

  • 2 cups canned chickpeas drained and rinsed
  • 4 cups fresh spinach washed and chopped
  • 1 can coconut milk full-fat for creaminess
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tablespoons curry powder adjust to taste

Instructions
 

  • In a large pot, heat a tablespoon of oil over medium heat and sauté the diced onion until translucent.
  • Add the minced garlic and curry powder, cooking for an additional minute until fragrant.
  • Stir in the drained chickpeas and coconut milk, bringing the mixture to a gentle simmer.
  • Add the chopped spinach and cook until wilted, about 5 minutes.
  • Season with salt and pepper to taste, then serve hot over rice or quinoa.

Notes

This curry can be stored in the refrigerator for up to 3 days and is great for meal prep. You can also add other vegetables like bell peppers or carrots for extra nutrition.
