1 cup cottage cheese (low-fat or full-fat, your choice)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth (low sodium)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon Italian seasoning (oregano, basil, thyme)

Salt and pepper to taste

8 ounces whole wheat fettuccine or pasta of choice

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

      Blend the Sauce: In a blender or food processor, combine the cottage cheese, vegetable broth, grated Parmesan cheese, Italian seasoning, salt, and pepper. Blend until smooth and creamy.

        Combine: Pour the cottage cheese mixture into the skillet with the garlic. Cook over medium heat, stirring occasionally, until warmed through. If the sauce is too thick, add a little of the reserved pasta water until you reach the desired consistency.

          Toss with Pasta: Add the cooked fettuccine to the skillet and toss gently to coat the pasta thoroughly with the creamy sauce. Heat for an additional minute to ensure everything is heated through.
