Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 bell pepper, diced (any color)

1 medium zucchini, diced

1 medium onion, chopped

2 garlic cloves, minced

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Freezer Bag: In a large resealable freezer bag, combine the rinsed quinoa, vegetable broth, black beans, corn, diced bell pepper, diced zucchini, chopped onion, minced garlic, cumin, smoked paprika, salt, and black pepper.

    Seal and Label: Squeeze out excess air, seal the bag tightly, and label it with the date and cooking instructions.

      Freezing: Lay the flat bag in the freezer. This makes it easier to store and stack.

        Cooking: When ready to cook, take the bag out of the freezer and let it thaw for a few hours or overnight in the refrigerator.

          Dump into Crockpot: Pour the contents of the bag into the crockpot.

            Cook in Crockpot: Cook on low for 6-8 hours or high for 3-4 hours. Check for tenderness of the quinoa and veggies.

              Serve: Stir well before serving, adjusting seasoning if necessary. Garnish with fresh cilantro or parsley if desired.
