2 medium-sized potatoes (about 300g), peeled and grated

1 medium carrot, grated

1 small onion, finely chopped

2 large eggs

1/2 cup whole wheat flour

2 tablespoons oats (optional for added texture)

1 teaspoon baking powder

1 teaspoon garlic powder

Salt and pepper, to taste

2 tablespoons olive oil (for frying)

Fresh herbs (like parsley or chives), finely chopped for garnish

Greek yogurt or applesauce, for serving

Instructions
 

Prepare the Potatoes: Place the grated potatoes in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible to ensure crispy pancakes.

    Combine Ingredients: In a large bowl, combine the grated potatoes, grated carrot, chopped onion, and fresh herbs (if using).

      Mix the Batter: In a separate bowl, whisk together the eggs, whole wheat flour, oats (if using), baking powder, garlic powder, salt, and pepper. Pour this mixture over the potato and vegetable mixture and stir until combined.

        Heat the Oil: In a large skillet, heat the olive oil over medium heat.

          Form the Pancakes: Use about 1/4 cup of the mixture for each pancake. Flatten them gently in the pan with a spatula.

            Cook: Fry the pancakes for about 4-5 minutes on each side or until they are golden brown and crispy.

              Drain: Remove the pancakes from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
