Ingredients
  

4 cups seedless watermelon, cubed and chilled

1/4 cup fresh mint leaves, finely chopped

1/4 cup honey or maple syrup (adjust for sweetness)

Juice of 1 lime

Pinch of salt

Instructions
 

In a blender or food processor, combine the chilled watermelon cubes, honey (or maple syrup), lime juice, and a pinch of salt. Blend until smooth.

    Stir in the finely chopped mint leaves gently.

      Pour the mixture into a shallow dish and spread it out evenly. Cover and freeze for about 2 hours, or until just firm.

        Remove from the freezer and use a fork to scrape the mixture, breaking it up into fluffy shavings. Return to the freezer for another hour.

          Before serving, scrape again with a fork to achieve a light, sorbet-like texture.

            Serve the sorbet in bowls or cones, garnished with additional mint leaves and watermelon slices if desired.
