1 cup Greek yogurt (plain, unsweetened)

1 cup low-fat mascarpone cheese

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup strong brewed coffee (cooled to room temperature)

1 tablespoon coffee liqueur (optional)

24 whole-grain ladyfinger biscuits

Unsweetened cocoa powder (for dusting)

Dark chocolate shavings (for garnish, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Cream Mixture:

    In a large mixing bowl, combine Greek yogurt, low-fat mascarpone cheese, honey (or maple syrup), and vanilla extract. Mix until smooth and creamy.

      Combine Coffee Mixture:

        In a shallow dish, combine the brewed coffee with the coffee liqueur (if using). Set aside to cool.

          Assemble the Tiramisu:

            Quickly dip each ladyfinger into the coffee mixture, ensuring not to soak them. Lay half of the soaked ladyfingers at the bottom of a rectangular baking dish, arranging them in a single layer.

              Layer the Cream:

                Spread half of the cream mixture over the arranged ladyfingers, smoothing it into an even layer.

                  Repeat the Process:

                    Dip the remaining ladyfingers in the coffee mixture and layer them on top of the cream layer. Follow up with the remaining cream mixture, spreading it out evenly.

                      Chill:

                        Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                          Serve:

                            Before serving, dust the top generously with unsweetened cocoa powder. Optional: Add dark chocolate shavings and fresh mint leaves for decoration.
