1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), chopped

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

4 cups chicken broth

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and black pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, diced (for garnish)

1 lime, cut into wedges (for serving)

Instructions
 

Sauté the Chicken: In a large pot over medium heat, heat the olive oil. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the chopped onion, garlic, and bell pepper. Sauté for about 3-4 minutes until the vegetables become tender.
