1 lb (450g) beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 ribs celery, diced

1 potato, diced

1 cup green beans, chopped

1 can (14.5 oz) diced tomatoes, with juice

6 cups beef broth

1 teaspoon dried thyme

1 teaspoon dried oregano

2 bay leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot over medium-high heat, add olive oil. Once hot, add the beef cubes in batches, making sure not to overcrowd. Sear each side for 3-4 minutes until browned. Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Then, add the sliced carrots and diced celery. Cook for an additional 5 minutes.

      Combine Ingredients: Return the seared beef to the pot. Add the diced potatoes, green beans, canned tomatoes (with their juice), beef broth, dried thyme, oregano, bay leaves, and season with salt and pepper.

        Simmer the Soup: Bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld together. Stir occasionally.

          Final Touches: Just before serving, taste the soup and adjust seasonings if necessary. Remove the bay leaves.
