Hearty Comfort Slow Cooker Beef Manhattan

2 pounds beef chuck roast

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 cups beef broth

1 cup carrots, sliced

1 cup celery, chopped

2 cups potatoes, diced (Yukon Gold or red)

1 tablespoon Worcestershire sauce

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper. Sear the roast in the skillet for about 4-5 minutes on each side until browned. Remove from the pan and set aside.

    Saut Vegetables: In the same skillet, add the diced onion and saut until translucent, about 3 minutes. Add the minced garlic and continue to saut for another minute until fragrant.

      Combine Ingredients: In the slow cooker, layer the carrots, celery, and potatoes. Place the seared beef roast on top. Pour the sauted onion and garlic over the meat.

        Add Broth and Flavorings: In a separate bowl, mix together the beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary. Pour this mixture over the ingredients in the slow cooker.

          Cook: Cover the slow cooker and set it to low for 8-10 hours or high for 4-6 hours, until the beef is tender and easily shredded with a fork.

            Serve: Once done, remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the pot and stir it into the broth and vegetables. Taste and adjust seasoning with more salt and pepper if needed.

              Garnish and Enjoy: Ladle the hearty beef Manhattan into bowls and garnish each serving with freshly chopped parsley. Enjoy this warm, comforting dish with crusty bread or over rice.
