Ingredients
  

1 pound ground beef (or turkey for a healthier option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 small onion, diced

1 bell pepper, diced (red or green)

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup beef broth (or vegetable broth for a vegetarian version)

Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions
 

In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer to crockpot.

    Add the diced onion, bell pepper, and minced garlic to the crockpot and stir to combine with the meat.

      Pour in the kidney beans, diced tomatoes (with juice), and beef broth. Stir well to mix all ingredients.

        Sprinkle in the chili powder, ground cumin, smoked paprika, and season with salt and pepper to taste. Mix until fully combined.

          Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the flavors meld together and the chili thickens.

            Once done, serve in bowls and top with your choice of shredded cheese, sour cream, chopped green onions, or cilantro if desired.
