1 lb ground beef or turkey (lean)

2 cups diced potatoes (skinny or russet)

1 cup diced carrots

1 cup diced green bell pepper

1 onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes (with juice)

1 can (15 oz) pinto or kidney beans (drained and rinsed)

1 cup corn (frozen or canned)

2 cups vegetable or beef broth

1 tsp Worcestershire sauce

2 tsp Italian seasoning

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional, for serving)

Fresh parsley for garnish (optional)

Instructions
 

Prep the Ingredients: Start by dicing the potatoes, carrots, green bell pepper, and onion. Mince the garlic.

    Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey until no longer pink. Season with salt and pepper.

      Layer in the Crockpot: Transfer the browned meat into the crockpot. Add the diced potatoes, carrots, bell pepper, onion, and minced garlic.

        Add Canned Goods: Pour in the diced tomatoes (with their juice), pinto or kidney beans, and corn over the layered ingredients.

          Mix in Broth and Seasonings: Pour the broth over the top, followed by the Worcestershire sauce and Italian seasoning. Stir gently to combine.

            Cook on Low: Cover the crockpot and set it to cook on low for about 6-8 hours, or on high for 3-4 hours, until the vegetables are tender and the flavors have melded together.

              Check Consistency: If the mixture is too thick, you can add an additional splash of broth or water.

                Serve: Once done, give the casserole a good stir, taste, and adjust seasonings if needed. Serve hot, topped with shredded cheddar cheese and garnished with fresh parsley, if desired.
