Hearty Italian Sausage Lasagna Soup

Ingredients
  

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

2 carrots, diced

2 stalks celery, diced

1 can (28 oz) crushed tomatoes

6 cups vegetable or chicken broth

2 teaspoons Italian seasoning

1 teaspoon red pepper flakes (optional)

1 cup ditalini pasta (or any small pasta)

2 cups fresh spinach

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil, for garnish

Salt and pepper, to taste

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it into chunks, and cook until browned. Remove with a slotted spoon and set aside.

    In the same pot, add the diced onion, garlic, red bell pepper, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

      Stir in the crushed tomatoes, broth, Italian seasoning, and red pepper flakes if using. Bring the mixture to a simmer.

        Once simmering, add the cooked sausage back into the pot. Allow the soup to simmer for about 20 minutes to let the flavors meld.

          Stir in the ditalini pasta, cooking until al dente according to the package instructions, usually 8-10 minutes.

            In the last few minutes of cooking, stir in the fresh spinach until wilted. Season the soup with salt and pepper to taste.

              To serve, ladle the soup into bowls and top each with a generous dollop of ricotta, a sprinkle of shredded mozzarella, and a dusting of Parmesan cheese. Garnish with fresh basil leaves.
