For the Cake:

3 ripe bananas, mashed

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup walnuts, chopped (plus extra for topping)

For the Cream Filling:

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

For the Topping:

Sliced bananas

1/4 cup chopped walnuts

Drizzle of honey (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Cake Batter: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add in the mashed bananas, eggs, and vanilla extract, mixing until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Fold in the chopped walnuts.

        Bake the Cakes: Divide the batter evenly between the prepared cake pans. Smooth the tops and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pans for 10 minutes before transferring to wire racks to cool completely.

          Prepare the Cream Filling: In a chilled mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, whipping until stiff peaks form.

            Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread half of the whipped cream filling over the top of the first layer. Slice some bananas and layer them on top of the whipped cream. Place the second layer of cake on top and repeat the process with the remaining whipped cream and sliced bananas.

              Finish the Cake: Top the cake with the remaining walnuts and additional banana slices. Drizzle with honey if desired.
