4 bone-in pork chops (about 1 inch thick)

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Dijon mustard

Zest of 1 lemon

Juice of 1 lemon

Instructions
 

In a mixing bowl, combine the minced garlic, chopped rosemary, thyme, parsley, salt, pepper, Dijon mustard, lemon zest, and lemon juice to form a herb paste.

    Rub the herb paste all over the pork chops, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat your grill to medium-high heat. Brush the grill grates lightly with olive oil to prevent sticking.

        Remove the pork chops from the marinade, letting the excess drip off.

          Place the pork chops on the grill and cook for about 6-7 minutes on one side, or until you see nice grill marks.

            Flip the chops and grill for an additional 5-6 minutes, or until the internal temperature reaches 145°F (63°C).

              Once cooked, remove the chops from the grill and let them rest for about 5 minutes before serving. This helps retain their juices.

                Serve the pork chops with a drizzle of olive oil and a sprinkle of fresh herbs, alongside your favorite sides, such as grilled vegetables or a fresh salad.
