Ingredients
  

2 cups broccoli florets

2 cups cauliflower florets

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium red onion, cut into wedges

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the broccoli, cauliflower, cherry tomatoes, bell peppers, and red onion.

      In a small bowl, whisk together the minced garlic, olive oil, dried oregano, dried thyme, smoked paprika, salt, and pepper until well blended.

        Pour the garlic herb mixture over the vegetables and toss until evenly coated.

          Spread the vegetables in a single layer on a baking sheet lined with parchment paper.

            Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.

              Once done, remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
