Ingredients
  

  • 8 ounces high-protein pasta (like chickpea or lentil pasta) cooked according to package instructions
  • 2 cups cauliflower florets steamed and mashed
  • 1 cup low-fat cottage cheese blended until smooth
  • 1 cup low-sodium chicken broth
  • 1/2 cup grated Parmesan cheese for topping and flavor
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg freshly grated
  • 1 cup frozen peas thawed

Instructions
 

  • Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cooked high-protein pasta, steamed and mashed cauliflower, blended cottage cheese, chicken broth, minced garlic, black pepper, and nutmeg. Mix until well combined.
  • In a large skillet, heat olive oil over medium heat. Add the mixture from the bowl and cook for about 5 minutes, stirring occasionally, to allow flavors to meld.
  • Fold in the thawed peas and half of the grated Parmesan cheese. Mix thoroughly and transfer the mixture into a greased baking dish.
  • Sprinkle the remaining Parmesan cheese on top of the pasta mixture. Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
  • Remove from the oven and let it rest for 5 minutes before serving. Garnish with additional black pepper if desired.

Tip 1: For added protein, consider mixing in cooked chicken or turkey breast.
