Ingredients
  

  • 2 cups sliced zucchini about 2 medium zucchinis
  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon Italian seasoning
  • 3 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese for topping
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes optional for heat
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.
  • In a large bowl, combine the chicken pieces, sliced zucchini, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper. Toss until well coated.
  • Transfer the mixture into the prepared baking dish and pour the chicken broth evenly over the top.
  • Bake in the preheated oven for 20 minutes, then remove from the oven and sprinkle the shredded mozzarella cheese on top.
  • Return the dish to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly and the chicken is fully cooked.
  • Let the dish rest for a few minutes before serving to allow the juices to redistribute.
