  • 2 large eggs room temperature
  • 1/4 teaspoon baking powder to help brownies rise

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with cooking spray.
  • In a mixing bowl, combine the cottage cheese, honey, and vanilla extract. Blend until smooth and creamy using a hand mixer or food processor.
  • Add the eggs one at a time, mixing well after each addition. Then, sift in the cocoa powder, almond flour, baking powder, and sea salt. Mix until just combined.
  • If using, fold in the chocolate chips gently, ensuring they are evenly distributed throughout the batter.
  • Pour the brownie batter into the prepared baking dish and spread it out evenly with a spatula.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Allow the brownies to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
