8 oz whole grain pasta (fusilli or penne works well)

1 lb lean ground beef (95% lean)

1 cup low-fat cream cheese

1 cup beef broth (low sodium)

1/2 cup Greek yogurt (plain, non-fat)

1 cup fresh spinach (chopped)

1/2 cup grated Parmesan cheese

3 garlic cloves (minced)

1 small onion (finely chopped)

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh herbs (basil or parsley for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and set aside.

    Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the onions and garlic, sautéing until the onions are translucent. Then, add the ground beef, breaking it up with a spatula. Cook the beef until browned, about 6-8 minutes. Season with salt, pepper, and Italian seasoning.

      Make the Sauce: Once the beef is cooked, reduce the heat to low. Stir in the cream cheese and beef broth, mixing until the cream cheese is fully melted and incorporated into the sauce.

        Add the Spinach and Greek Yogurt: Incorporate the chopped spinach into the sauce, allowing it to wilt for about 1-2 minutes. Remove from heat and stir in the Greek yogurt and grated Parmesan cheese until the sauce is creamy and well-blended.

          Combine Pasta and Sauce: Add the cooked pasta to the creamy beef mixture. Toss everything together until the pasta is evenly coated with the sauce. Adjust seasoning with additional salt and pepper if necessary.
