Ingredients
  

1 can (5 oz) tuna, drained and flaked

4 large eggs

1/4 cup cottage cheese

1/4 cup shredded cheddar cheese (or your favorite cheese)

2 tablespoons Greek yogurt

1 tablespoon mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons chopped fresh parsley (optional)

Cooking spray or olive oil for greasing

Instructions
 

Preheat the oven to 350°F (175°C) and grease a silicone muffin pan or a regular muffin pan with cooking spray or olive oil.

    In a mixing bowl, whisk together the eggs, cottage cheese, Greek yogurt, mayonnaise, and Dijon mustard until smooth and well combined.

      Add the flaked tuna, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper to the egg mixture. Stir gently until all ingredients are evenly mixed.

        If using, fold in the chopped parsley for added freshness.

          Pour the mixture into the prepared muffin pan, filling each cup about 3/4 full.

            Bake in the preheated oven for 18-22 minutes or until the egg bites are set and lightly golden on top.

              Remove from the oven and allow to cool for a few minutes before carefully lifting the egg bites out of the pan.

                Serve warm or store in an airtight container in the fridge for meal prep. These bites can be reheated easily in the microwave.
