For the Butter Chicken Marinade:

500g boneless chicken thighs, cut into cubes

1 cup plain yogurt

2 tablespoons lemon juice

1 tablespoon ginger-garlic paste

1 tablespoon garam masala

1 teaspoon turmeric powder

1 teaspoon cayenne pepper

Salt to taste

For the Butter Chicken Sauce:

3 tablespoons unsalted butter

1 large onion, finely chopped

2 tablespoons ginger-garlic paste

1 can (400g) crushed tomatoes

1 cup heavy cream

1 tablespoon sugar

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon fenugreek leaves (dried)

Salt to taste

Fresh cilantro for garnish

For Serving:

Steamed basmati rice or naan

Lemon wedges

Instructions
 

Marinate the Chicken:

    In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, garam masala, turmeric, cayenne pepper, and salt. Add the chicken pieces and mix until well coated. Cover and marinate in the refrigerator for at least 1 hour (or overnight for best results).

      Cook the Chicken:

        Preheat your oven to 200°C (400°F). Spread the marinated chicken on a baking sheet and bake for 20 minutes, or until cooked through and slightly charred. You can also grill them for an extra smoky flavor.

          Prepare the Sauce:

            While the chicken is baking, melt the butter in a large pan over medium heat. Add the chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for another 2-3 minutes until fragrant.

              Add Tomatoes and Spices:

                Pour in the crushed tomatoes, sugar, cumin powder, coriander powder, and salt. Cook for about 10-15 minutes until the mixture thickens and the oil starts to separate from the sauce.

                  Combine Chicken with Sauce:

                    Add the cooked chicken pieces into the sauce along with the heavy cream and dried fenugreek leaves. Stir gently to coat the chicken in the sauce. Let it simmer for another 5-10 minutes, allowing the flavors to meld together.

                      Serve:

                        Garnish your delicious Holiday Butter Chicken with fresh cilantro. Serve it hot over steamed basmati rice or alongside warm naan and lemon wedges for added zest!
