Holiday Comfort Chicken Marsala Supreme

4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

4 tablespoons unsalted butter

8 ounces cremini mushrooms, sliced

3 cloves garlic, minced

1 cup Marsala wine

1 cup low-sodium chicken broth

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon heavy cream

Fresh parsley for garnish

Instructions
 

Begin by preparing the chicken. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. This helps them cook evenly and tenderly.

    In a shallow dish, mix the flour, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off the excess.

      In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts and cook for approximately 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside, keeping it warm.

        In the same skillet, add the remaining 2 tablespoons of butter and the sliced mushrooms. Sauté for about 5 minutes, or until the mushrooms are browned and tender. Add the minced garlic and cook for an additional minute until fragrant.

          Carefully pour the Marsala wine into the skillet, scraping the bottom to deglaze and release flavorful bits stuck to the pan. Let it simmer for 2 minutes.

            Add the chicken broth, rosemary, thyme, and season with salt and pepper to taste. Allow the mixture to simmer for about 5-7 minutes, or until the sauce has reduced by half.

              Stir in the heavy cream and adjust the seasoning as necessary. Return the chicken breasts to the skillet, allowing them to soak up the delicious sauce for a couple of minutes.

                Serve the chicken marsala supreme hot, garnished with fresh parsley. Pair with mashed potatoes or your favorite side to indulge in the holiday spirit.
