Ingredients
  

8 ounces feta cheese, crumbled

1/2 cup cream cheese, softened

1 tablespoon lemon juice

1 tablespoon fresh thyme leaves (plus extra for garnish)

1 cup walnuts, toasted and chopped

1/4 cup honey

1 tablespoon olive oil

Freshly cracked black pepper, to taste

Mini phyllo pastry cups (about 18)

Pomegranate seeds for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix the Cheese Filling: In a medium bowl, combine crumbled feta, cream cheese, lemon juice, and fresh thyme leaves. Mix until well-blended and smooth.

      Prepare Phyllo Cups: Place the mini phyllo pastry cups on a baking sheet. If you’re using store-bought cups, follow package instructions for baking.

        Fill the Cups: Spoon the cheese mixture into each phyllo cup, filling them generously.

          Bake: Bake in the preheated oven for about 10-12 minutes or until the tops are slightly golden and the filling is warmed through.

            Make the Honey Drizzle: While the cups are baking, combine honey and olive oil in a small saucepan over low heat. Stir in a few sprigs of thyme and let it infuse for about 5 minutes, then remove from heat.

              Season: Drizzle the warm honey mixture over the baked feta bites. Finish with a sprinkle of freshly cracked black pepper.

                Garnish and Serve: Remove the bites from the oven, garnish with extra thyme leaves and pomegranate seeds if using. Serve warm and enjoy!
