1 pound potato gnocchi

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 pound Italian sausage (mild or spicy, casings removed)

4 cups vegetable broth

2 cups kale, chopped (stems removed)

1 large potato, peeled and diced

1 cup heavy cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

    Cook the Sausage: Add the Italian sausage to the pot, breaking it up with a spatula. Cook until browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.

      Build the Soup Base: Pour in the vegetable broth and bring the mixture to a gentle boil. Add the diced potato and cook for about 10 minutes, or until tender.

        Add the Kale and Gnocchi: Stir in the chopped kale and potato gnocchi, cooking until the gnocchi float to the top, which indicates they are done (about 2-3 minutes).

          Cream it Up: Reduce the heat to low and stir in the heavy cream. Season the soup with salt and pepper to taste, and let it warm through for a couple of minutes.

            Serve: Ladle the gnocchi zuppa into bowls and garnish with fresh parsley and a generous sprinkle of Parmesan cheese.
