4 large russet potatoes

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup cooked and crumbled bacon

1 cup chopped green onions

1 cup steamed broccoli florets

½ teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

Olive oil, for drizzling

Fresh parsley (for garnish)

Prep the Potatoes: Preheat your oven to 425°F (220°C). Scrub and rinse the russet potatoes under cold water. Pat them dry with a paper towel. Prick each potato several times with a fork and then rub them with a bit of olive oil and sprinkle with salt.

    Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake them for 45-60 minutes or until the skin is crispy and a fork easily pierces through.

      Prepare the Toppings: While the potatoes are baking, prepare the toppings. In a mixing bowl, combine the sour cream, garlic powder, smoked paprika, and a pinch of salt and pepper. Set aside.

        Cook the Bacon: In a frying pan over medium heat, cook the bacon until crispy. Remove from the heat, and once cooled, crumble into small pieces.

          Assemble the Supreme Potatoes: Once the potatoes are fully baked, remove them from the oven. Let them cool for a few minutes, then slice them open lengthwise. Gently fluff the insides of the potatoes with a fork.

            Add Toppings: Spoon a generous dollop of the seasoned sour cream mixture into each potato. Top with shredded cheddar cheese, crumbled bacon, steamed broccoli florets, and chopped green onions.
