Ingredients

4 boneless, skinless chicken breasts

1 cup cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup crushed buttery crackers (like Ritz or Club crackers)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, thyme, salt, and pepper on both sides.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and sear them for about 3-4 minutes on each side until they’re golden brown, but not fully cooked. Remove from heat.

Make the Sauce: In a mixing bowl, combine the cream of mushroom soup with the sour cream and half of the shredded cheddar cheese. Mix until well combined.

Assemble the Bake: In a greased casserole dish, place the seared chicken breasts side by side. Pour the creamy mixture over the chicken, ensuring they are coated evenly.

Add Topping: In a small bowl, mix the crushed crackers with the remaining cheddar cheese. Sprinkle this mixture evenly on top of the chicken and sauce.

Bake: Cover the casserole dish with foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the topping is golden and crispy.

Garnish and Serve: Once baked, remove from the oven, garnish with fresh chopped parsley, and serve hot.
