2 lbs baby potatoes (red and yellow varieties)

1/2 cup fresh basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

1/4 cup sun-dried tomatoes, chopped

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the baby potatoes thoroughly. If they are larger, cut them in half or quarters to ensure even cooking.

      Season the Potatoes: In a large mixing bowl, toss the potatoes with olive oil, garlic powder, onion powder, sea salt, black pepper, and red pepper flakes until well coated.

        Roast the Potatoes: Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and fork-tender. Stir halfway through to ensure even roasting.

          Add Pesto and Tomatoes: Once the potatoes are done, remove them from the oven. Add the basil pesto and chopped sun-dried tomatoes to the hot potatoes, tossing gently to combine and coat the potatoes evenly.

            Add Parmesan: Sprinkle the grated Parmesan cheese over the potato mixture and return to the oven for an additional 5-7 minutes, allowing the cheese to melt and slightly brown.

              Serve: Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
