2 1/2 cups all-purpose flour

1 tablespoon cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1/4 cup packed brown sugar

1 large egg

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon almond extract (optional)

1 cup white chocolate or chocolate kisses, for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

      Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy, about 3-4 minutes.

        Add Egg and Color: Mix in the egg, red food coloring, vanilla extract, and almond extract (if using) until well combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture, mixing on low speed until just combined. Do not overmix.

            Form the Cookies: Using a tablespoon or cookie scoop, portion out the dough and roll it into balls. Roll each ball in granulated sugar to coat evenly.

              Place on Baking Sheet: Place the sugared cookie balls on the prepared baking sheets, spacing them about 2 inches apart.

                Bake: Bake in the preheated oven for 10-12 minutes or until the cookies are set and slightly cracked on top.

                  Add Topping: As soon as you remove them from the oven, gently press a white chocolate piece or chocolate kiss into the center of each cookie. Allow them to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
