Ingredients
  

4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 teaspoons lemon juice

1 teaspoon dried oregano

1 teaspoon dried thyme

3 cloves garlic, minced

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

Fresh parsley for garnish

Lemon slices for serving

Instructions
 

Prepare the Marinade: In a small bowl, whisk together olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

      Preheat the Air Fryer: Set the air fryer to 400°F (200°C) for about 5 minutes.

        Prepare the Vegetable Mixture: In a mixing bowl, combine halved cherry tomatoes, sliced Kalamata olives, and crumbled feta cheese. Toss gently to mix.

          Air Fry the Salmon: Lightly grease the air fryer basket with cooking spray. Carefully place the marinated salmon fillets in the basket, skin-side down. Cook for 8-10 minutes, depending on thickness, or until the salmon flakes easily with a fork.

            Add the Vegetables: During the last 3 minutes of cooking, add the tomato and olive mixture on top of the salmon to heat through.

              Garnish and Serve: Once cooked, remove the salmon and vegetables from the air fryer. Garnish with fresh parsley and serve with lemon slices on the side.
